Oyster Stew

This was a New Year's Eve treat in my childhood, often prepared by my dad.
Ingredients
- 2 tablespoons flour
- 1 ½ teaspoons salt
- 1 teaspoon Worcestershire sauce
- dash Tabasco sauce
- 2 tablespoons water
- 1 pint oysters, with the liquor
- ¼ cup margarine
- 1 quart milk, scalded
- pats of margarine
- oyster, or other, crackers
Instructions
- Blend flour, seasonings, and water in a soup kettle.
- Add undrained oysters and margarine.
- Simmer over very low heat for 3-4 minutes until the edges of the oysters begin to curl, stirring gently.
- Add very hot milk, remove from heat and cover.
- Let stand for 15 minutes.
- Reheat briefly.
- Serve in bowls and top with margarine pats.
- Serve with oyster crackers.
Chef's Notes
My Take
I always increase the Worcestershire in almost all the old family recipes and this is no exception. Also, a dash of Tabasco? Hah. Consider substituting Crystal, Louisiana, or Franks for Tabasco, and shake it in there. Also, I do not recall the last time I used margarine, so use butter. For extra depth, add some Old Bay spice powder in the first step.
