Mom's Meatloaf

This is the meatloaf of my childhood. Like any good meatloaf recipe, leftovers are great for sandwiches the next day.
Ingredients
- 1 pound ground beef
- 1 ½ slices bread, torn into small pieces
- ½ cups milk
- 1 egg, beaten
- 2 tablespoons dried minced onion
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ⅛ teaspoon dry mustard
- ⅛ celery salt
- ⅛ garlic salt
- 1 ½ teaspoons Worcestershire sauce
- ketchup
- optional, 3 hard cooked eggs, peeled
Instructions
- Preheat oven to 350°F.
- Mix ground beef, bread and milk.
- Add the beaten egg, spices, and Worcestershire sauce.
- Shape into a load, in a loaf pan.
- If desired, hide the peeled hard cooked eggs in the center of the loaf.
- Spread ketchup over the top of the loaf.
- Bake for 1 hour.
Chef's Notes
My Take
I don't think I have ever cooked this recipe with the small amounts of spices called for: I always use a lot more. Also, I never have celery salt or garlic salt, so I use celery seed and garlic powder when I cook this.
My kids don't seem to go for the tucked eggs, but if you want that authentic Sixties style, the eggs and ketchup bring it on.
