Mom's Meatloaf

This is the meatloaf of my childhood. Like any good meatloaf recipe, leftovers are great for sandwiches the next day.

Ingredients

  • 1 pound ground beef
  • 1 ½ slices bread, torn into small pieces
  • ½ cups milk
  • 1 egg, beaten
  • 2 tablespoons dried minced onion
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅛ teaspoon dry mustard
  • ⅛ celery salt
  • ⅛ garlic salt
  • 1 ½ teaspoons Worcestershire sauce
  • ketchup
  • optional, 3 hard cooked eggs, peeled

Instructions

  • Preheat oven to 350°F.
  • Mix ground beef, bread and milk.
  • Add the beaten egg, spices, and Worcestershire sauce.
  • Shape into a load, in a loaf pan.
  • If desired, hide the peeled hard cooked eggs in the center of the loaf.
  • Spread ketchup over the top of the loaf.
  • Bake for 1 hour.

Chef's Notes

My Take

I don't think I have ever cooked this recipe with the small amounts of spices called for: I always use a lot more. Also, I never have celery salt or garlic salt, so I use celery seed and garlic powder when I cook this.

My kids don't seem to go for the tucked eggs, but if you want that authentic Sixties style, the eggs and ketchup bring it on.
