Fried Eggplant Strips

Fried eggplant is a treat with a nice marinara sauce.
Ingredients
- 1 medium egglant, about the volume of a softball
- 1 egg
- ½ c milk
- salt and pepper
- a sleeve of saltine crackers
- ½ c olive oil
- juice of half a lemon
- optional marinara sauce
Instructions
- Preheat the oil in a heavy pan or wok over medium-high heat. Do not smoke the oil.
- Slice unpeeled eggplant lengthwise into 3/8 wide strips.
- Crush the crackers into crumbs, in a bowl or a zipper-lock bag, then place in a shallow bowl.
- Mix egg, milk and pepper to taste in a shallow bowl.
- Dip eggplant into the egg mixture then roll the slices into the cracker crumbs. Set aside without touching each other.
- Fry the breaded slices in the hot oil in small batches until tender and lightly browned. Set on paper towels when fried.
- Drizzle lemon juice over the fried eggplant.
- Serve hot, optionally with warm marinara sauce.
